Sourdough starter adds depth of flavor and probiotics.
Add 500 grams of flour to a large bowl.
Add 125 grams of refreshed sourdough starter, 5 grams of yeast, and 250 grams of water to the flour.
Mix everything together by hand until all the flour is incorporated with the water.
Cover the bowl with plastic wrap and let it rest for 30 minutes.
After 30 minutes, add 20 grams of olive oil and 12.5 grams of salt to the dough and incorporate it.
Cover the bowl again and let it rest for another 30 minutes.
Wet your hands and stretch the dough by pulling it from one side to the other, repeating this 6 to 8 times until the dough feels tense.
Recover the dough and let it rest for another 30 minutes.
Spray water on the countertop and place the dough on it.
Gently pull the dough from the middle to the sides to create tension, then wrap the dough from the sides to the middle and return it to the bowl.
Cover the bowl with plastic wrap and let it rest for another 30 minutes.
After 30 minutes, wet your hands and perform a coil fold by pulling the dough up and over itself from the middle.
Cover the dough again and let it rest for another 30 minutes.
After 30 minutes, dust the countertop with flour and divide the dough into two equal portions using a dough scraper.
Pre-shape each portion into a round ball, placing the sticky side up and folding the sides to the center.
Place the dough balls in a kitchen towel to prevent sticking and cover them with flour.
Let the dough rest for 1 hour.
After 1 hour, push the dough gently from the middle to the sides, then transfer it to parchment paper.
Create a pattern in the dough by pushing your fingers into it, optionally covering it with sesame seeds.
Spray the dough with water and place it in an oven preheated to 250 degrees Celsius (482 degrees Fahrenheit) for 15 minutes with steam.
After baking, spray the flatbreads with water to keep them moist.
