Set the oven to 350°F.
Crush 25 chocolate sandwich cookies (Oreos) in a food processor or a bag until finely crushed.
Transfer the crushed cookies to a bowl and add 1/4 cup (56 grams) of melted butter. Mix until you have a wet crumbly mixture.
Press the mixture into a pie dish to form a crust, using a flat-bottomed glass or measuring cup to create a flat well and shape the sides.
Bake the crust in the oven for 10 minutes.
Chop 2 ounces of bittersweet chocolate into small pieces for melting.
In a microwave, melt the chopped chocolate and 1/4 cup (56 grams) of cubed butter in 30-second bursts, stirring in between, for about 2 minutes.
In a large bowl, whisk together 2 large room temperature eggs and 1/3 cup (66 grams) of granulated sugar until combined.
Whisk in the warm melted chocolate into the egg mixture.
Add 2 tablespoons of cocoa powder, 1/8 teaspoon of salt, and 1/2 teaspoon of vanilla extract. Mix well.
Sprinkle in 2 tablespoons of flour and mix until just combined.
Pour the brownie mixture into the cooled crust and give it a shimmy to spread evenly.
Bake the brownie layer in the oven at 350°F for about 20 minutes until puffed and set.
Chop 3 1/2 ounces of bittersweet chocolate into small pieces for the pudding.
In a smaller heatproof bowl, whisk 2 egg yolks to loosen them up.
In a medium saucepan, combine 3/4 cup (150 grams) of granulated sugar, 2 tablespoons of cornstarch, and 1/4 teaspoon of salt. Whisk together.
Drizzle in 1 1/2 cups (360 mL) of whole milk while whisking to prevent clumps.
Place the saucepan over medium-high heat and whisk frequently until thickened, about 5 minutes.
Once thickened, temper the mixture by adding 1/2 cup of the hot milk mixture to the egg yolks while whisking, then add the rest of the hot mixture to the bowl.
