Combine 7g active dry yeast and 25g sugar in a bowl.
Add 180ml warm milk and cover for 15 minutes.
In a separate bowl, mix 250g all-purpose flour and 1 tsp salt.
Add the yeast mixture to the flour mixture along with 42g softened unsalted butter.
Knead the dough until smooth and pliable.
Place the dough in a well-greased bowl, cover, and let rise until almost triple in size, time varies with room temperature.
On a working surface, shape the dough into a ball and divide it into 4 pieces.
Flatten each piece into a rough rectangle and roll it up.
Place on a baking tray and make about 12 slashes on top.
Apply egg wash on the dough.
Cover again and let rise for 45-60 minutes.
Bake in a preheated oven at 230°C for 20 minutes.
