4 cloves garlic
4 dried red chilies
1 teaspoon red chili powder
1 and 1/2 teaspoons Himalayan salt
1 teaspoon Nepalese timur powder

Chop the tomatoes into quarters or medium chunks and place them in a saucepan.

Cut the garlic cloves in half and place them in a dry pan with the dried red chilies.

Pan grill the garlic and chilies until they develop char marks, removing the chilies first as they char faster.

Add the grilled garlic and chilies to the saucepan with the tomatoes, along with red chili powder and salt.

Cover the saucepan and let the tomatoes release their juices naturally on low heat for 7 to 8 minutes.

Stir the mixture, cover again, and cook for another 5 minutes until the tomatoes are soft and juicy.

Increase the heat to medium-high and cook until most of the liquid evaporates, stirring frequently to prevent burning.

Once thickened, add the timur powder and turn off the heat.

Let the mixture cool down, then add fresh spring coriander and blend with a hand blender until slightly coarse.

Transfer to a serving bowl and garnish with a few coriander leaves.
