Shred the napa cabbage, place in a bowl, add salt, and set aside.
Add the ground pork to a bowl.
Slice the green onion and chop finely if thick.
Thinly slice the garlic chives or substitute with green onion and garlic cloves if needed.
Peel and grate the ginger.
Squeeze liquid from rehydrated mushrooms, remove hard stem, and finely dice.
Squeeze water out of the cabbage, then add to the bowl of pork.
Add all filling ingredients to the bowl, including 2 tbsp of mushroom soaking liquid.
Combine the pork mixture with hands, then stir with chopsticks in one direction.
Microwave a small amount of filling for 30 seconds, taste, and adjust seasonings if needed.
Open the dumpling wrappers and keep them in packaging to prevent drying out.
Place a wrapper in your palm, scoop about 2 tbsp of filling, and place it in the center.
Fold the wrapper in half and pinch together in the center, making pleats if desired.
Seal the dumpling tightly to prevent air from being trapped.
Place each dumpling on a parchment-lined baking sheet, covering with a damp tea towel if needed.
If freezing, cover with plastic wrap and freeze for 24 hours before transferring to a freezer-safe bag.
To cook, heat a pan over medium-high heat and add vegetable oil.
Arrange dumplings flat side down and let sit until golden brown on the bottoms.
Add water and cover to steam until water evaporates and dumplings are cooked through.
Combine all ingredients for the dipping sauce and serve.
