small napa cabbage
½ tbsp salt
300g ground pork
1 green onion
2 garlic chives (or 1 green onion and 2-3 garlic cloves)
10g ginger
5 dried shitake mushrooms and its soaking liquid
1 tbsp soy sauce
1 tbsp Chinese cooking wine
2 tsp toasted sesame oil
½ tsp mirin (or ½ tsp sugar)
1 tsp Chinese Five Spice powder
½ tsp white pepper
1 tbsp cornstarch
1-2 package(s) of dumpling wrappers
2 tbsp soy sauce
1 tbsp Chinese black vinegar
½ tsp toasted sesame oil
sesame seeds (optional)
green parts of 1 green onion (optional)
1-2 tbsp neutral cooking oil (vegetable, canola, etc.)
Couple tbsp of water

Shred the napa cabbage, place in a bowl, add salt, and set aside.

Add the ground pork to a bowl.
