Nacatamales

Cultural Context

Nacatamales are a traditional Nicaraguan dish, often enjoyed during family gatherings and celebrations. These hearty tamales are made with masa and filled with a savory mixture of pork and vegetables, wrapped in banana leaves, and steamed to perfection. They reflect the country's rich culinary heritage and are a beloved comfort food, often served with a side of pickled cabbage. Today, variations can be found throughout Central America, showcasing local ingredients and flavors.

1

Soak banana leaves in hot water until pliable, about 10 minutes.

2

In a large bowl, combine masa harina, salt, and enough chicken broth to form a dough.

3

In a skillet, heat lard over medium heat and sauté onions, garlic, and green bell pepper until softened.

4

Add pork, cumin, oregano, salt, and pepper to the skillet; cook until pork is browned.

5

Stir in diced potatoes, carrots, peas, olives, and tomatoes; cook for another 5-7 minutes.

6

Remove from heat and let the filling cool slightly.

7

Lay out a banana leaf and spread a portion of masa dough in the center.

8

Add a generous scoop of the pork filling on top of the masa.

9

Fold the banana leaf over the filling, creating a package, and tie securely with kitchen twine.

10

Repeat with remaining masa and filling until all are wrapped.

11

Place wrapped nacatamales in a large pot and cover with water; bring to a boil.

12

Reduce heat and simmer for about 2 hours, ensuring nacatamales are submerged.
