In a bowl, add the feta cheese and crumble it with a fork.

Add the cream cheese, the mint finely chopped, salt, pepper, and mix.

Preheat the oven to 180°C (350°F) set to fan.

Spread the sandwich bread slices on your worktop and use a rolling pin to roll out each slice until they are very thin.

Drizzle the center of the bread with olive oil and brush its edges with the egg wash.

Divide the filling among the bread slices and wrap them diagonally to shape the turnovers.

Press to remove the air that is trapped inside the turnovers and use a fork to press them, along the seam side, in order to stick well and prevent them from opening during baking.

Transfer them to a baking pan lined with parchment paper and brush them with the olive oil or the egg wash.

Bake them for 15 minutes, until they are nicely golden.

Serve with honey and sesame seeds.
