Place 5 ounces of chopped semi-sweet chocolate and 1/2 cup of room temperature butter in a heatproof bowl.
Set the bowl over a saucepan of simmering water and melt the chocolate and butter together until smooth.
Remove the bowl from heat and add 1 cup of granulated white sugar and 2 tablespoons of cocoa powder, stirring to dissolve the sugar.
Whisk in 1 teaspoon of pure vanilla extract.
Add 3 large eggs one at a time, whisking after each addition to combine well.
Stir in 1/4 teaspoon of salt, adjusting if using salted butter.
Add 3/4 cup of all-purpose flour, switching to a rubber spatula to mix.
Fold in 3/4 cup of semi-sweet chocolate chips or nuts if desired.
Prepare an 8-inch square pan by buttering it or spraying with nonstick spray and lining the bottom with parchment paper.
Pour the batter into the prepared pan and smooth the top.
Bake in a preheated 350°F (180°C) oven for about 30 minutes, checking for doneness at 25 minutes with a toothpick for moist crumbs.
Let the brownies cool on a wire rack to room temperature before cutting into squares.
