Preheat the oven to 350°F (175°C) and grease a cake pan.
In a mixing bowl, combine all-purpose flour, baking powder, and salt.
In another bowl, whisk together granulated sugar, eggs, lemon zest, lemon juice, and olive oil until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
