Spätzle

Cultural Context

Originating from the southern regions of Germany, Spätzle is a beloved dish that reflects the culinary traditions of Swabia. Traditionally served as a hearty accompaniment to meats and gravies, it embodies the comfort of home-cooked meals. In modern times, Spätzle has gained popularity beyond Germany, inspiring variations in other countries, including Austria and Switzerland, where it is often enjoyed with cheese or sautéed vegetables.

1

In a mixing bowl, add flour and ground sea salt, and combine them together.

2

Transfer the flour mixture to the bowl of a stand mixer and form a well in the center.

3

In another bowl, beat the eggs before pouring in ½ cup of milk and whisk until well blended.

4

Add the egg mixture to the well in the flour and process with the paddle attachment for 1 minute on low speed.

5

Increase to speed 4 and process for 5 minutes, stopping to clean the sides of the bowl halfway through.

6

Add a little bit of milk, ½ tablespoon at a time, processing for 30 seconds between each addition until the batter is smooth but not too runny.

7

Let the batter rest for 10 minutes.

8

Add 1 tbsp. of coarse sea salt to a large pot of water and bring it to a boil.

9

Working in batches, scoop some batter into a spätzle press and push it through into the boiling water.

10

Cook the noodles for 2 to 3 minutes or until they rise to the top, indicating they are done.

11

Scoop the noodles into a bowl and transfer to a colander, rinsing immediately with cold water to stop the cooking process and drain well.

12

Set the noodles aside while cooking the remaining batter.

13

In a skillet, add some butter and melt it until it starts sizzling.

14

Add the cooked noodles to the skillet and sauté for about 4 to 6 minutes on medium-high heat until the edges start to brown.

15

Season the noodles with paprika, freshly ground black pepper, garlic powder, chives, dill, or cheese as desired.

16

Remove from heat when the noodles are a nice golden color and serve immediately.
