In modern times, Spätzle has gained popularity beyond Germany, inspiring variations in other countries, including Austria and Switzerland, where it is often enjoyed with cheese or sautéed vegetables.

Put 2 cups of all-purpose flour into a mixing bowl.
Add 3 eggs to the bowl.
Add 1/2 teaspoon of salt to the bowl.
Pour in 1/2 cup of cold water from the refrigerator.
Use a whisk to mix the ingredients until homogenous, then switch to a large spoon for better mixing.
Adjust the consistency by adding more cold water until the dough flows but is not runny.
Prepare the schpetzli maker by keeping it off the boiling water until ready to use.
Bring a pot of plain boiling water to a boil without adding salt.
Spoon the dough into the schpetzli maker and press it over the boiling water to drop the dough into the water.
Cook the schpetzles for 3 to 5 minutes until they float to the top.
While the schpetzles are cooking, rinse the schpetzli maker with cold water immediately to prevent the dough from sticking.
