Rinse the white beans to remove any particles.
Pour in warm water and let the beans sit for 30 minutes.
Drain the water and rinse the beans again.
Transfer the beans to a pot and add about 4 cups of water.
Cover the pot and cook the beans, checking at intervals to prevent overcooking.
Prepare the other ingredients: blend 4 tomatoes, 1 inch ginger, 6 cloves garlic, 1/2 red bell pepper, 1/2 red onion, and 1/2 white onion until smooth.
Pour the blended mixture into a pot and cook until the water dries, about 15 minutes.
Add the drained beans to the pot with the blended mixture and stir well.
Cover and let the beans cook for an additional 5 minutes.
Add chopped carrots and spring onions, cooking for 2 more minutes to maintain carrot crunch.
