Place 12 eggs in a large pot and sprinkle salt on top to prevent cracking.

Bring water to a boil and let it boil for about 2 minutes.

Cover the pot with a lid, turn off the heat, and let it sit for 12 minutes.

Pour out the hot water and add cold water with ice to cool the eggs for about 6 minutes.

Crack the shells of the eggs while they are in the pot of water and peel them.

Cut each egg lengthwise down the center and place the halves back on a plate.

Pop out all the yolks into a mixing bowl, using a spoon if necessary.

Mash the yolks with a fork until smooth.

Add about half a cup of mayonnaise to the yolks, adjusting to taste.

Add a couple of teaspoons of dijon mustard to the mixture.
