2 Tablespoons Avocado Oil
1 medium Onion diced, or about 1 cup
3 ribs Celery diced, or about 1 ½ cups
3 large Carrots thinly sliced, or about 1 ½ cups
6 cups Chicken Broth (up to 2 cups more if desired)
1 Tablespoon Italian Seasoning
2 large Bay Leaves
1 teaspoon Salt
½ teaspoon Black Pepper
2 cups Diced Chicken cut into ½" chunks
1 cup Orzo Pasta
1 teaspoon Lemon Zest
1 Tablespoon Lemon Juice
2 Tablespoons Fresh Parsley for garnish- add just before serving

Heat the avocado oil in a large pot over medium heat.

Add the diced onion, celery, and carrots to the pot and sauté until softened.
