Instant Plain Masoob

Cultural Context

Originating from Yemen, Masoob is a traditional dish often enjoyed for breakfast or as a snack. It combines simple ingredients like bread and bananas, showcasing the resourcefulness of Yemeni cuisine. Today, variations can be found in other Middle Eastern countries, highlighting its adaptability and enduring popularity.

YEYEother
4 servings
Servings4
2 cups brown flour
3 tbsp milk powder
1 cup warm water
4 bananas
2 tablespoons honey
2 tablespoons butter
200g cream
3 - 5 dates chopped
cornflakes
grated cheddar cheese (optional)
1

Mix the flour and milk powder, gradually add in the warm water, and mix until it forms a nice ball of dough. Cover it and let it rest for ± 25 minutes.

2

Divide the dough into 2 pieces and roll out.

3

Heat a pan or skillet on medium high heat. Carefully lay down the bread onto the pan. Once bubbles appear on the surface, flip over and allow the bottom to cook (about 2 minutes on each side). Allow the bread to cool.

4

Coarsely grind the flatbreads in a food processor.

5

Peel and mash the bananas with a fork in a bowl, then mix in the honey to sweeten. Mix in the chopped dates and cream, and lastly add in the ground flat-bread.

6

Layer the masoob in a serving glass/bowl with some cheddar cheese, sprinkle some cornflakes, and top with honey, black seeds, or almonds.
