Cut the baguette into pieces about four inches long and then cut each piece in half vertically.
Toast the pieces of baguette in a toaster for about three minutes until crispy.
Crack 6 cage-free organic eggs into a large bowl and season with sea salt and black pepper, then whisk until combined.
Heat a non-stick fry pan over medium heat and add 2 tablespoons of extra virgin olive oil.
Add 2 cups of fresh spinach to the pan and mix until wilted, about 60 to 90 seconds.
Add the whisked eggs to the pan and cook, mixing every 30 seconds to create large chunks of scrambled eggs, for about three minutes.
Rub raw garlic on each piece of toasted baguette.
Rub fresh tomatoes over the pieces of toasted baguette and season with sea salt and drizzle with extra virgin olive oil.
Top each piece of baguette with the scrambled eggs and spinach, and sprinkle with chopped chives.
