Welcome to the Minute Farmhouse channel. We're making pumpkin pie cinnamon rolls topped with maple frosting.
Add 2 cups of milk, 1/2 cup of sugar, and 1 1/2 teaspoons of dry active yeast into a stand mixer.
If desired, wait 5 minutes for the yeast to bloom, but the creator skips this step.
Add 1/2 cup of oil and 1 cup of canned pumpkin to the mixer.
Crack 1 egg into a separate bowl to avoid shell pieces, then add it to the mixer.
Add a splash of vanilla (about 1 teaspoon or more) and the spices: 1 teaspoon of cinnamon, 1/2 teaspoon of ginger, 1/4 teaspoon of cloves, and 1/4 teaspoon of nutmeg.
Spoon the flour into a measuring cup to avoid compacting it, leveling it off with a knife. Add 6 cups of flour to start, leaving the 7th cup aside.
Mix the ingredients and let it rest for 10 minutes to hydrate the flour.
After 10 minutes, mix and knead the dough. If it’s not coming together, add another cup of flour.
Use a spatula to knock down flour from the sides of the bowl. The dough should pull away from the sides when enough flour is added.
Knead the dough in a Bosch mixer for 8 minutes. If it’s still sticky, add more flour as needed.
Remove the dough from the bowl and spray the bowl with cooking spray. Place the dough back in the bowl and let it rest for 1 hour.
While the dough is rising, make the maple frosting by creaming together 6 tablespoons of butter and 3 cups of powdered sugar.
Add 1/2 cup of maple syrup and a splash of heavy cream to the frosting mixture and beat until combined. Cover with saran wrap and set aside.
After 1 hour, the dough should have risen. Prepare a clean counter with flour and deflate the dough.
Roll out the dough into a rectangle using a baker's roller and sprinkle with softened butter.
Sprinkle about 1/2 cup of granulated sugar and cinnamon over the buttered dough.
Roll the dough tightly and pinch out air bubbles as you go.
Cut the rolled dough into 2-inch pieces using a sharp knife or dental floss.
Spray the baking pans with cooking spray and place the cinnamon rolls inside.
Preheat the oven to 375°F and bake the rolls for 25 minutes.
While the rolls bake, cover the maple frosting and refrigerate for at least 2 hours.
After baking, let the cinnamon rolls cool slightly before frosting.
