Smash up the cinnamon stick using a mortar and pestle.
Add 2 tablespoons of sugar to the smashed cinnamon stick.
Add 1 cup of coffee and 1 cup of hot water to the mixture and stir.
Let the coffee steep for about 4 minutes.
While the coffee is steeping, prepare the chili salt by tearing up the hibiscus with your hands.
Pulverize the guo chili and hibiscus mixture until well ground.
Pour the pulverized mixture into salt and mix well.
Layer the prepared fruit in a bowl and sprinkle with the chili salt and a squeeze of lime.
Let the fruit marinate while preparing the cocktail.
Scoop about 1/2 cup of papaya into a cocktail shaker.
Add juice from 1 whole lime and about 1.5 ounces of orange juice to the shaker.
Add about 1 ounce of mezcal to the shaker.
Add the hibiscus chili salt to the shaker.
Fill the shaker halfway with ice and shake vigorously for about 15 seconds.
Strain the cocktail into a glass and enjoy.
