Börek is often served at gatherings and celebrations, symbolizing hospitality and comfort. Today, variations exist worldwide, with each culture adding its unique twist to this flaky delight.

Olive oil reduces saturated fat while adding flavor.

Whole wheat adds fiber and nutrients.
Peel and chop the potatoes into small cubes.
Boil the potatoes in salted water until tender, about 10-15 minutes.
Drain the potatoes and mash them in a bowl.
Heat vegetable oil in a skillet over medium heat and sauté chopped onions until translucent, about 5 minutes.
Add chopped red and green peppers and cook until softened.
Combine the mashed potatoes, sautéed onions, peppers, salt, black pepper, and red pepper in a bowl.
Lay one sheet of filo dough on a clean surface and brush with almond milk and vegetable oil.
Layer another sheet on top and brush again with almond milk and vegetable oil.
Place a portion of the potato filling along one edge of the pastry.
Fold the sides over the filling and roll tightly to form a log.
Repeat with the remaining pastry and filling.
Place the rolls on a baking sheet lined with parchment paper.
Brush the tops with vegetable oil.
Bake for 25-30 minutes until golden brown and crispy.
