Remove the feathers from around the sternum area of the Canadian goose.
Skin along the sternum to expose the breast.
Remove one half of the breast from the bird.
Place the breasts in a brine for about 24 to 30 hours.
Cut the brined breasts down the middle.
Pound out the breasts flat to help tenderize them.
Fork the breasts to break down the fibers and further tenderize them.
Prepare the marinade using 2 tablespoons of ponzu, 4 tablespoons of sweet and sour sauce, 1.5 tablespoons of pickled ginger, 2.5 tablespoons of Sriracha, 2 tablespoons of toasted sesame seeds, and 4 tablespoons of Worcestershire sauce.
Mix the marinade ingredients well and let the breasts marinate for another 12 to 24 hours.
Preheat the grill to medium heat.
Grill the breasts opposite the hot coals for about 10 minutes.
Check on the breasts after 10 minutes; they should be looking good.
Flip the breasts and grill for another 10 minutes at the most.
Serve the goose breast with fresh corn on the cob, tomato cucumber onion salad, and roasted potatoes.
