Gather all ingredients: 5 bananas, 1/2 cup sugar, 1/4 cup sugar, salt, flour, vanilla extract, and 2 cups of whole milk.
Separate the eggs using a bowl method: crack the egg into a small bowl and pour it over your hand to let the whites slip out, leaving the yolk intact.
In a bowl, whisk together the egg yolks, salt, 1/2 cup sugar, cold milk, and vanilla extract. Ensure the water in the double boiler is cool to avoid lumps.
Place the mixture over the double boiler and whisk continuously as the milk heats up until the pudding thickens and can no longer thicken further. Remove from heat and set aside.
Using a hand mixer on the highest setting, beat the 3 egg whites until foamy (about 5 minutes). Gradually add 1/4 cup sugar until dissolved and the mixture is frothy.
For assembly, start with a layer of pudding, followed by a layer of cookies, and then sliced bananas. Repeat this process until all ingredients are used except for the meringue.
Spread the meringue on top in dollops, then use the back of a spoon to spread it out and create peaks by lifting the spoon quickly. Ensure to cover the entire surface.
