Break up 1 pound of breakfast sausage in a frying pan.
Add 1 chopped onion to the sausage and cook together until browned.
Grate 1 cup of medium cheddar cheese and set aside.
Once the sausage is browned, add the grated cheese to the pan and turn off the heat, allowing the cheese to melt.
Flatten out the jumbo biscuits with a rolling pin.
Place 1 tablespoon of the meat mixture in the center of each flattened biscuit.
Pinch the biscuit dough around the filling to seal it, placing the sealed side down on a tray lined with parchment paper.
Preheat the oven to 350°F.
Bake the meat pies in the preheated oven for 13 to 17 minutes or until golden brown.
Remove from the oven and let cool slightly before serving.
