Add 1 teaspoon of salt to boiling water and add 2 small potatoes or 1 large potato; cover and simmer until done.
In a frying pan, add a little bit of olive oil and add mashed tomatoes.
Add 2 teaspoons of tomato paste, 1 tablespoon of parsley, 1 tablespoon of basil, 1 tablespoon of oregano, 1 teaspoon of salt, and 1 teaspoon of sugar to the tomatoes.
Pour in 1 cup of water and half a glass of Italian wine; simmer for 1 hour.
Peel the potato and mash it up.
Add 1 egg and half a teaspoon of salt to the mashed potato.
Add 1/4 cup of flour and mix until it forms a dough.
Divide the dough into half and roll it into a long, thin piece.
Cut the rolled dough into bite-sized pieces.
Drop the pieces into boiling water with 1 teaspoon of salt and cook for about 2 minutes until they are ready.
Drain the pierogies and serve with light tomato sauce, fresh basil, and a sprinkle of parmesan cheese.
