For the chocolate donuts, start with 2 cups of white flour (maida).
Add 1 teaspoon of active dry yeast to the flour.
In a bowl, take 3/4 cup of warm milk and add 1 teaspoon of sugar to it. Stir well.
Add the active dry yeast to the warm milk mixture and stir. Let it sit covered for 5 minutes until frothy.
After 5 minutes, combine the milk mixture with the flour and knead it well.
Add 2-3 teaspoons of butter to the kneaded dough.
For eggless donuts, skip the egg; for donuts with eggs, add 1 egg to the dough while kneading.
Let the dough rise for 2 hours until doubled in size.
Roll the dough and cut into round shapes, using the middle part to create the donut shape.
Oil a baking sheet and place the shaped donuts on it.
Cover the donuts and let them rise again for 10-20 minutes.
Preheat the oven to 180°C (356°F) and bake the donuts for 20 minutes.
Meanwhile, prepare for frying by heating plenty of vegetable oil in a deep fryer.
Brush the donuts with plain milk before baking if making eggless donuts.
After 20 minutes, check the donuts; they should be nicely risen and fluffy.
Fry the donuts in hot oil until golden brown, ensuring the oil is hot to prevent cracking.
Remove the fried donuts and let them cool on a paper towel.
To make the chocolate ganache, use a double boiler to melt half a packet of dark chocolate with 2 tablespoons of butter and 2 tablespoons of fresh cream.
Dip the cooled donuts into the chocolate ganache and decorate with sprinkles and gems.
