1

Preheat the oven to 275°F.

2

Place the 8 lb bone-in shank ham in a roasting pan, fat side up.

3

Pour in enough water to fill the pan with 2 inches.

4

Cover the pan with a sheet of heavy-duty aluminum foil.

5

Bake the ham in the preheated oven for 6 to 8 hours, or longer if desired.

6

Remove the pan from the oven and transfer the ham to a large cutting board to cool.

7

Pour the pan drippings into a bowl or glass measuring cup and set the pan aside.

8

Debone the ham by inserting a sharp knife next to the bone and cutting around it, pulling the meat away as you cut.

9

Twist and pull the bone to remove it, and also remove the small socket joint bone.

10

Remove and discard any excess fat from the ham.

11

Return the meat to the roasting pan and skim any fat from the top of the drippings, discarding it.

12

Reserve 1 cup of the pan drippings and discard or reserve the remaining drippings for another use.

13

Add 1/2 cup of honey to the reserved drippings, along with 1/2 cup of brown sugar, 2 tbsp of liquid smoke, 2 tbsp of Worcestershire sauce, and a pinch of ground cloves.

14

Stir the ingredients well to blend them.

15

Pour the sauce over the ham and cover it with foil.

16

Bake and continue cooking for another 30 minutes.

17

Uncover the ham and baste it, then cook for another 10 to 15 minutes to brown the outside.

18

Transfer the ham to a serving platter and let it stand for 10 minutes before carving.
