1 cup celery, chopped
1 medium onion, chopped
3 cloves garlic, minced
1 bell pepper, chopped
2 medium carrots, sliced
4 scallions, chopped
1 cup corn, fresh or frozen
1 can (13.5 oz) coconut milk
1 can (15 oz) red beans, drained
1 cup casrip (or substitute with another leafy green)
1 cup Malabar spinach (or substitute with another leafy green)
1 tablespoon cooking oil
2 cups water
