Instructions

  1. 1Rinse rice under cold water until the water runs clear.

  4. 4Sauté chopped onion, garlic, and bell pepper until softened, about 3-4 minutes.
  5. 5Add drained black-eyed peas and stir to combine with the vegetables.
  6. 6Pour in coconut milk and water, then add thyme, bay leaves, and carrots.

  3. 3Heat vegetable oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove meatballs from the skillet and set aside.
  4. 4In the same skillet, add beef broth, diced tomatoes, Worcestershire sauce, dried thyme, and sugar. Stir to combine.
