8 to 10 ounces of raw unfiltered honey
1 teaspoon of Celtic Sea salt

Separate the cloves of garlic by giving them a press and peeling them.

Cut off the fibrous ends of the garlic cloves.

Place half of the peeled garlic cloves into a clean 12-ounce mason jar.

Add a quarter teaspoon of Celtic Sea salt on top of the garlic in the jar.

Add the remaining garlic cloves to the jar.

Sprinkle another quarter teaspoon of Celtic Sea salt on top of the second batch of garlic.

Pour 8 to 10 ounces of honey over the garlic and salt in the jar.

Cover the jar tightly with a clean lid and set it on the countertop to ferment.

After one day, remove the lid to release air and bubbles, then shake the jar and close it again.

Flip the jar over to help mix the ingredients as they ferment.

On day three, repeat the process of opening the jar to release air.

After day three, place the jar in the refrigerator if you want to stop the fermentation process, or keep it out to ferment longer.
