Heat a wok on medium flame and add 2 tablespoons of oil.
Add chopped onion, capsicum, and chilies to the hot oil.
Fry the onions and capsicum until they soften.
Add the peri peri masala corn to the wok and mix.
Add salt to taste and allow any moisture to evaporate by increasing the heat.
Cook the corn for about 2 minutes until puffed up, then remove from flame and let cool.
Toast one side of the bread slices in a pan on medium flame and reserve them.
Spread 2 tablespoons of the corn masala on the toasted side of each bread slice.
Layer the corn masala with grated cheddar cheese on top.
Heat the same pan on low to medium flame and add 3 tablespoons of oil.
Place the prepared bread slices in the pan and cover to allow the cheese to melt.
Once the cheese has melted and the bread is evenly toasted, remove from the pan and serve.
