Boil potatoes in a pot with water covering them for 15 to 20 minutes on medium to high heat until soft.
Dry roast niger seeds in a pan on medium heat until they crackle, then blend or pound into a powder.
Prepare green peas (fresh or soaked dried peas) and finely chop onion, roughly chop spring coriander, and mince garlic and ginger.
In a large bowl, combine boiled potatoes, green peas, chopped onion, spring coriander, minced garlic, and ginger.
Add coriander powder, turmeric powder, red chili powder, and salt to taste, along with niger seeds powder.
In a separate pan, heat 3 to 4 tablespoons of mustard oil with fenugreek seeds until the seeds darken, then mix in a few pinches of turmeric powder.
Pour the hot oil mixture over the ingredients in the bowl and combine well.
Add lemon juice and mix again.
