Heat vegetable oil in a pot over medium heat until shimmering.
Sauté chopped onions, garlic, and ginger until fragrant, about 3-4 minutes.
Add chopped tomatoes and cook until softened, about 5 minutes.
Stir in peanut butter until well combined with the mixture.
Add water and vegetable broth, stirring to mix everything evenly.
Introduce the matoke chunks into the pot, ensuring they are submerged.
Cover and simmer for 20-25 minutes until matoke is tender.
Add chopped green peppers and carrots, cooking for an additional 5 minutes.
Stir in spinach and lime juice, cooking until wilted, about 2-3 minutes.
Season with salt and black pepper to taste.
Serve hot, garnished with fresh coriander.
