Preheat the oven to 130°C (250°F) and line two baking trays with greaseproof paper.

Separate 6 free-range eggs, placing the egg whites in a mixing bowl and saving the yolks for another use.

Gradually add 300 grams of white sugar spoon by spoon while continuing to whisk for about 3-4 minutes until smooth.

Divide the meringue into two portions on the lined baking trays, shaping one slightly larger than the other into a crown-like shape.

Bake in the oven for about 1.5 hours, then turn off the oven and let the meringues cool in the residual heat for about an hour.

Whip double cream with 1-2 tablespoons of sugar and 1-2 teaspoons of vanilla paste until soft peaks form.
