2 cups bell peppers
3 cloves garlic
1/4 cup olive oil
1/4 cup lemon juice
2 tablespoons capers
1 teaspoon salt
2 tablespoons red wine vinegar
1/4 cup parsley

Cover the grill grate with foil

Arrange the tomatoes and peppers on the foil

Bake the tomatoes for 5-7 minutes until the skin cracks

Allow the vegetables to cool

Peel the tomatoes from the skin, remove the stalk, and cut into 6-8 pieces
