Warm milk in the microwave for 15 seconds and add yeast, stirring until activated.
Separate 4 eggs, keeping 2 egg whites aside for the cheese layer.
In a stand mixer, beat 2 whole eggs and 2 egg yolks with sugar for 4-5 minutes until fluffy.
Add the yeast mixture, melted butter, and flour to the egg mixture and mix until elastic.
Form the dough into a ball, spray with non-stick spray, cover with plastic wrap, and let rise for about 1.5 hours until doubled in size.
Cut a circle of parchment paper for later use.
Prepare the cheese layer by mixing homemade cottage cheese with sugar and egg yolks.
Beat the reserved egg whites until stiff peaks form and gently fold into the cheese mixture.
Spray a springform pan and place the parchment circle inside, spraying the sides.
Once the dough has risen, split it in half and stretch one half to fit the bottom of the pan.
Spread the cheese layer evenly over the dough in the pan.
Stretch the remaining dough to cover the cheese layer and spray lightly with non-stick spray.
Let it rise for another 30 minutes.
Prepare the topping by blending cold butter, flour, and sugar until crumbly.
Lightly beat one egg for an egg wash and brush it over the top of the cake.
Bake at 180°C (350°F) for 1 hour, covering with aluminum foil after 30 minutes to prevent over-browning.
Let it cool for 15 minutes before running a knife around the edges and removing from the pan.
