Dairy-Free Sweetened Condensed Milk

Originating from the need for a dairy-free alternative, this sweetened condensed milk is popular among those following vegan or lactose-free diets. It serves as a versatile ingredient in desserts and beverages, mimicking the rich sweetness of traditional condensed milk. Combine coconut milk and maple syrup in a saucepan over medium heat.
Stir continuously until the mixture begins to simmer.
Reduce heat to low and let simmer for 10-15 minutes, stirring occasionally.
In a small bowl, mix cornstarch with water to create a slurry.
Slowly add the cornstarch slurry to the saucepan while stirring.
Continue to cook for an additional 5-10 minutes until thickened.
Remove from heat and stir in vanilla extract and salt.
Let cool to room temperature before transferring to a container.
Refrigerate for at least 2 hours to thicken further.
Use as a dairy-free substitute in recipes calling for sweetened condensed milk.
