Start by dissolving the papelón (chancaca) with a cinnamon stick, cloves, and a cup of water in a pot over medium heat until it reduces to a syrup.
Once the syrup is ready, let it cool down.
Peel the ripe plantains and cut them into pieces before boiling them.
Boil the plantains for about 10 minutes until cooked, then drain and transfer to a bowl.
Mash the cooked plantains until smooth using a masher or fork.
Add a pinch of salt to the mashed plantains to enhance flavor.
Incorporate 3 tablespoons of sugar into the mashed plantains.
Gradually add 250 g of precooked cornmeal to the mixture and start kneading until well combined.
As the mixture becomes stiff, add the cooled syrup little by little until the dough reaches a soft consistency.
Mix in 100 g of grated cheese into the dough until evenly distributed.
Let the dough rest for about 5 minutes to firm up before shaping.
Shape the dough into small discs or rings using your hands.
