1 teaspoon red chili sauce
1 teaspoon red chili flakes
1 teaspoon oregano
1 bowl boiled sweet corn
1 bowl boiled rajma
2-3 tomatoes (for puree)
1 slice cheese

Wash 1 cup of rice thoroughly and soak it for half an hour.

In a pot, add water and a little salt, then add the soaked rice and boil it. You can also boil it in a pressure cooker with double the amount of water and take one whistle on high flame.

Once boiled, cool the rice by spreading it on a plate or using a strainer.

In a pan, add 1 teaspoon butter and 1 teaspoon ghee, then add 1 teaspoon garlic paste and sauté until golden brown.

Add 1 chopped onion to the pan and sauté.

Add chopped bell peppers and capsicum (yellow and red) - about 1/4 cup each, and sauté them together.

Add boiled broccoli to the pan.

Season with 1/2 teaspoon red chili powder and 1/2 teaspoon salt.

Add 2 teaspoons tomato sauce, 1 teaspoon Schezwan sauce, and 1 teaspoon red chili sauce, then mix well and sauté.

Add 1 teaspoon red chili flakes and 1 teaspoon oregano to the mixture.

Add 1 bowl of boiled sweet corn and 1 bowl of boiled rajma, then mix everything together.

Reserve some rice and use half a bowl of rice in the mixture, then mix well again.

Garnish with coriander leaves and set aside the Mexican rice.

For the sauce, in a pan, add 1 teaspoon butter and 1 teaspoon ghee, then add 1 teaspoon garlic paste, chopped onion, bell peppers, and capsicum, and sauté.

Add 1/2 teaspoon red chili powder and 1/2 teaspoon salt, then mix well.

Add the same red chili flakes and oregano as before, about 1 teaspoon each.

Add the tomato puree made from 2-3 blended tomatoes and cook until the raw flavor of the tomatoes is gone.

Add a slice of cheese to the sauce and let it melt, then mix well to create a cheesy sauce.

Serve the Mexican rice hot with the cheesy sauce.
