1

Set up a food processor to build the sauce.

2

Add 15 ounces of fire roasted tomatoes, 1 rough chopped medium-sized onion, 1 jalapeno pepper, 1 serrano pepper, and 3 garlic cloves to the food processor.

3

Add 1 teaspoon of Mexican oregano, 1 teaspoon of cumin, and salt and pepper to taste to the processor.

4

Process the mixture to create a sauce.

5

Transfer the sauce to a bowl.

6

In a large pan set to medium heat, add a couple tablespoons of olive oil.

7

Add 1.5 cups of rinsed long grain rice to the pan and toast for several minutes until it starts to brown.

8

Stir the rice occasionally to ensure even toasting.

9

Pour the processed sauce mixture into the pan with the toasted rice and mix well.

10

Simmer the rice and sauce mixture for about 2 to 3 minutes to develop flavors.

11

Add 2 cups of chicken broth to the pan and bring to a boil.

12

Reduce the heat, cover the pan, and let it simmer for about 15 to 20 minutes until the liquid is absorbed and the rice is fluffy.

13

Optionally, add frozen corn or peas, or cooked chicken to the rice during the simmering process.

14

After 20 minutes, remove the pan from heat and let it sit covered for 5 more minutes.

15

Fluff the rice with a fork before serving.
