4 cups cooked brown and black rice
1/2 carrot, julienned
1/2 zucchini, julienned
1/2 onion, thinly sliced
1/2 eggplant, diagonally sliced
4 shiitake mushrooms
1 cup shredded lettuce
1 pack firm tofu, cubed
4 eggs
green onion, for garnish
seaweed flake, for garnish
sesame oil & seeds, for garnish
avocado oil or other vegetable oil
1 tbsp Korean chili paste(Gochujang)
1 tsp soy sauce, low-sodium
1/2 tsp brown sugar
2 cloves garlic, minced
1 tsp sesame oil
1 tsp apple cider vinegar

In a medium skillet over medium heat, add 1 tsp of avocado oil and carrot. Sauté for a few minutes, until it’s softened. Set the carrot aside.

In the same skillet over medium heat, add another teaspoon of avocado oil and zucchini. Sauté for a few minutes, until it’s softened. Set aside.

Perform the same process for onion, mushroom, and eggplant.

Cut the tofu horizontally in half and dice them into 1 inch cubes. In the same skillet, add oil and cook the cubed tofu until they are golden brown.

Assemble the bibimbap. Place the rice in the center of a bowl. Add the cooked carrot, zucchini, onion, mushroom, eggplant and lettuce around the sides of the rice. Place the cubed tofu into the center of the rice and top with the fried egg.

Garnish with thinly sliced green onion, seaweed flakes, sesame seeds and oil. Serve the bibimbap with 1 tsp of the gochujang sauce for each bowl. To eat, mix everything together.
