1 teaspoon salt
1 can black beans (with juice)
1/2 cup uncooked rice
1 cup Mexican blend cheese

Heat 2 tablespoons of olive oil in a pan.

Add 1 pound of cubed pork loin and brown for about 3 minutes without any seasonings.

Pour in 12 ounces of beer, 1 (14.5 ounce) can of crushed tomatoes with green chilies, 1 tablespoon of chili powder, 1 teaspoon of cumin, 1 tablespoon of oregano, 2 teaspoons of black pepper, and 1 teaspoon of salt. Stir to combine.

Cover and let simmer for 1 hour until the meat is fork tender.

After 1 hour, add in 1 can of black beans (with juice) and 1/2 cup of uncooked rice. Stir and cover.

Let it cook for another 20 minutes.

Once the rice is almost done, add in 1 cup of Mexican blend cheese and stir.
