High Protein Slow Cooker Chili

Add chicken breasts to a bowl with seasonings, olive oil, and water to make a marinade. Let it sit for 30 minutes in the fridge.
Brown the chicken in a pan to get color, then transfer to the slow cooker.
In the same pan, fry the onion until softened, then add garlic and cherry tomatoes, frying for a couple more minutes.
Add white wine to the pan, simmer, and scrape up any burnt bits before transferring everything to the slow cooker.
Add sundried tomato pesto, corn flour, salt, and chicken stock to the slow cooker, then cover and cook for 3 and 1/2 hours.
After cooking, stir in double cream, cheddar cheese, and 150g of spinach, then cover and cook for an additional 30 minutes until the spinach wilts.
Plate the dish and serve with new potatoes, rice, or extra veggies.
For the beef stifado, fry whole shallots until golden, then add seasonings and over a kilo of lean diced beef.
Add corn flour and cover, cooking on high for 6 hours or low for 8 hours.
For chicken tikka masala, chop onions and fry them until softened and golden with whole spices.
Add garlic and ginger paste, frying for 30 seconds, then add dried ground spices and fry for another 30 seconds.
Add water to scrape burnt bits, then transfer to the slow cooker with lean chicken breasts, salt, lemon juice, sugar, corn flour, tomato puree, and chopped tomatoes. Cover and cook for 4 hours.
After cooking, stir in half fat crème fraîche and fresh coriander, then plate up and serve with naan, rice, or salad.
For St. Mary's chicken, fry smoked bacon medallions until golden, then add garlic and cook for another 30 seconds before transferring to the slow cooker.
