Add half of the strong white bread flour into a mixing bowl.
Pour in warm water, a packet of instant yeast, and sugar; mix until loose.
Add salt and the remaining flour; mix until combined.
Use a whisk attachment to mix the dough until smooth.
Add warm water in splashes to loosen the dough as needed.
Incorporate half of the softened butter into the dough using the whisk attachment.
Add the remaining butter and mix until smooth again.
Cover the dough with cling film and let it prove for about an hour until doubled in size.
Knock the air out of the dough and flour a work surface lightly.
Divide the dough into four even pieces; shape two into hoagies and the rest into small rolls.
Place the shaped dough onto a parchment-lined tray and cover with a tea towel; let rise for 45 minutes.
Make an egg wash by separating an egg and whisking the egg white with whole milk.
Spread the egg wash on top of the rolls and bake in the oven for about 30 minutes.
Let the rolls cool for about an hour before slicing.
Put ribeye steaks in the freezer for about 40 minutes to firm up for slicing.
Slice the ribeye steak into thin strips using a knife.
Chop sweet white onions roughly, not finely.
Heat a pan over medium heat with a little olive oil and a small knob of butter; add the onions and cook slowly until they caramelize slightly without burning.
Heat another pan to high heat without oil; add the ribeye steak pieces and cook quickly, separating them slightly.
