Place half a pound of honey turkey on the pastry, leaving about a 1-inch border.
Add eight ounces of sliced pepper jack cheese evenly over the turkey.
Spread the cooled shallots evenly over the cheese.
Whisk together one egg with a tablespoon of water to make an egg wash.
Brush the egg wash over the edges of the pastry.
Place the second piece of puff pastry on top and press to seal, trimming any excess pastry as needed.
Crimp the edges with a fork to seal the pastry.
Brush the top of the pastry with the egg wash for a golden color.
Make six small slits in the top layer of pastry for steam ventilation.
Preheat the oven to 400°F (200°C).
Bake the pastry for 25-30 minutes, checking for doneness as oven temperatures may vary.
Let the pastry cool slightly before slicing.
