Marinate 1 kg of beef in a bowl with 1 cup of beer, soy sauce, 2 teaspoons of mustard, 2 teaspoons of cumin, salt, and black pepper. Cover and refrigerate overnight.
Pre-cook 1 kg of potatoes for 15 minutes and cut them into sticks.
Cut 1.5 onions and 3 bell peppers (green, yellow, and red) into strips.
Cut 6 sausages into pieces.
Prepare 2 tomatoes and 4 hard-boiled eggs, cutting them into quarters.
Fry the pre-cooked potatoes in deep oil until crispy and golden, then drain them to remove excess oil and sprinkle with salt.
In another pan, fry the sausages until browned, then add the marinated beef and cook until browned.
Add the onions and then the bell peppers to the beef, cooking until the onions are translucent.
Combine the cooked sausages with the beef mixture and let it heat through for a couple of minutes.
On a large platter, layer the crispy potatoes as the base, then add the beef mixture, followed by the tomatoes, locoto pepper, mayonnaise, and serve with hard-boiled eggs on top.
