Get the potatoes on to boil with a touch of salt in the water.

Heat a pan and add olive oil.

Cook sliced red onion in the pan on low heat.

Add mushrooms to the pan after the onions have cooked.

Add a knob of garlic infused rosemary butter (about 1 tablespoon) to the pan.
