In a mixing bowl, combine heavy cream, cinnamon, nutmeg, brown sugar, and a pinch of salt. Whisk for about a minute.
Transfer the mixture into an ice cream machine or a KitchenAid attachment and turn it on to whip up the ice cream.
Once the ice cream is ready, remove it from the machine and scrape off any excess from the attachments. Fold in chopped dark chocolate.
Place the ice cream back in the freezer to set for about an hour, checking that the freezer is not in defrost mode.
Scoop the ice cream onto a frozen tray and skewer each scoop before they become too hard.
In a saucepan, add a splash of water, granulated white sugar, and corn syrup. Bring to a boil and heat until it reaches 240 degrees Fahrenheit.
In a small bowl, add gelatin and cold water, stirring to avoid lumps. Let it sit for a few minutes to bloom.
Once the syrup reaches 240 degrees, add the bloomed gelatin to a stand mixer with the whisk attachment. Turn the mixer to low and slowly drizzle in the hot syrup until the gelatin melts.
Increase the mixer speed to medium and pour in the remaining syrup. Then turn to high speed and whip for about three minutes until it resembles sticky whipped cream.
Dip the skewered ice cream scoops into the marshmallow mixture, ensuring they are completely covered without holding them too long in the warm marshmallow.
Return the dipped ice cream pops to the freezer for about 30 minutes to set the marshmallow.
Remove the ice cream pops from the freezer and toast them with a torch, stove burner, or campfire.
