Separate 4 egg yolks from the whites.
Add 150 grams of caster sugar to the egg yolks and whisk until pale and fluffy.
In a large saucepan, combine 550 grams of whole milk, 300 grams of double cream, 1 teaspoon of vanilla extract, and a pinch of salt.
Heat the milk and cream mixture over medium heat until steaming but not boiling, stirring occasionally.
Temper the egg yolks by adding a ladle of the hot milk mixture while whisking continuously.
Repeat the tempering process a couple of times until the egg mixture is warm.
Pour the tempered egg mixture back into the saucepan with the milk and cream mixture.
Cook over medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a wooden spoon.
Strain the custard through a sieve into a container to remove any lumps.
Cool the custard to room temperature, then cover with cling film directly on the surface and refrigerate overnight.
Churn the chilled custard in an ice cream machine for 50 to 60 minutes according to the manufacturer's instructions.
Prepare the graham cracker pie crumb by mixing 50 grams of plain flour, 60 grams of wholemeal flour, 25 grams of soft light brown sugar, a pinch of sea salt, and 1/2 teaspoon of ground cinnamon in a bowl.
Add 60 grams of melted butter and 10 grams of honey to the dry ingredients.
Add 1 to 2 teaspoons of water, starting with 1 teaspoon, and mix with a spatula until it starts to come together.
Use your hands to rub the mixture into a crumbly texture, breaking up any large nuggets.
