Apple Pie Chia Pudding

¼ cup chia seeds
1 scoop Swanson organic pea protein powder
½ tsp ground cinnamon
¼ tsp ground nutmeg
1 ¼ cups coconut milk, unsweetened
2 Tbsp. apple sauce, unsweetened
1 Tbsp. pure maple syrup
1 tsp vanilla extract
1 apple, chopped

In a large mason jar, combine chia seeds, protein powder, cinnamon and nutmeg.

Add in coconut milk, applesauce, maple syrup and vanilla extract.

Stir with a fork to break apart chia seeds and protein powder clumps.

Cover and shake jar to mix ingredients well.

Allow to sit in fridge for at least 30 min to thicken.

Remove from fridge, separate into 2 bowls or smaller mason jars/container and top with chopped apple.
