Add 0.5 cups of almond flour to the food processor.
Add 1.25 cups of solid coconut oil to the food processor.
Add 0.5 cups of maple syrup to the food processor.
Add a pinch of pink Himalayan salt to the food processor.
Pulse the mixture in the food processor until sticky, ensuring some coconut chips remain visible.
Prepare two cookie sheets lined with parchment paper.
Use a cookie scoop to place the cookie batter on the sheets, spacing them out to allow for spreading.
Bake the cookies in the preheated oven for 12 to 16 minutes, checking for doneness around 12 minutes.
Remove the cookies from the oven and let them cool for at least 30 minutes before serving.
