Cut off the ends of the cucumbers.

Slice the cucumbers thinly using a mandolin or a chef knife.

Line a baking tray with paper towels and lay the cucumber slices on it.

Pat the cucumber slices dry with another paper towel to remove excess moisture.

In a bowl, combine plain Greek yogurt, 1/4 teaspoon salt, 1/4 teaspoon black pepper, 1 tablespoon red wine vinegar, and 1 tablespoon honey.

Chop fresh dill (about 1 tablespoon) and add it to the dressing mixture.
